First, peel the husk off, leaving behind 1-2 layers of leaves and the corn silk. Place them in a pot of cold water and gradually bring to a boil. This helps the corn cook from the interior to exterior, allowing it to retain its natural flavor. Adding 2 grams (1/4 teaspoon) of baking soda helps preserve vitamins B1 and B2, which make the corn sweeter and yellower. You’ll observe the kernels are plump and contain a richer flavor than the typical method of boiling. Allow the corn to cook almost completely prior to adding a little salt to enhance the natural sweetness without causing shrinkage of the corn. Once complete, take the corn out, drain and peel.
